Pinwheel Samosas

India's favorite street food - samosa.. but in a few form! Presenting pinwheel samosas with the spicy and delicious filling of a samosa in the shape of pinwheels. Ingredients : 4 medium potatoes boiled peeled and roughly mashed (to make 2½ cups of mashed potatoes) 1/2 cup green peas boiled and drain, I am using frozen green peas 1 teaspoon cumin seeds (jeera) 1 tablespoon green chili chopped 2 teaspoons coriander powder (dhania) 1/2 teaspoon red chili pepper 1/2 teaspoon garam masala 1 teaspoon mango powder (amchur) 1-1/4 teaspoons salt, adjust to taste 2 tablespoons cilantro finely chopped(hara dhania) Dough - 1 cup all purpose flour (plain flour or maida) 2 tablespoons fine sooji (semolina flour) (available in Indian grocery stores) 1/2 teaspoon salt 3 tablespoons oil Approximately 1/3 cup cold water Also needed 3  tablespoons all purpose flour (maida or plain flour) 1/4  cup water Oil to fry Method: For Dough - Mix flour, salt, and oil. ...

Lobhia & Paneer Croquettes

Weekend special breakfast with overnight soaked lobhia (black eyed beans) mixed with paneer and potato! Ingredients: 1 cup – Lobia (Black eye beans) soaked overnight and boiled till cooked but not mushy ( This is the quantity after cooking the beans) ½ cup – Potatoes boiled and mashed 100 gms – Paneer (cottage cheese) grated 2 big – Onions finely chopped 1 tsp – Ginger garlic paste 2 nos – Tomato chopped finely 2 to 3 nos – Green chillies chopped ½ tsp – Cumin seeds ½ tsp – Coriander powder ½ tsp – Cumin powder 1 tsp – Chilli powder or as per taste ½ tsp – Garam masala 1 tsp – Amchoor powder (dried raw mango powder) 1 tbsp – Hand crushed Kasoorimethi (dried fenugreek leaves) 2 tbsp – Coriander leaves chopped finely A semi thin batter made of Maida (all-purpose flour) water and a pinch of salt to dip the croquettes while crumb coating them. Besan Wali Arbi

Ingredients:  20 Taro roots (Arbi) medium sized 1/2 cup Mustard oil 1 Green Chili Pepper chopped 1 tsp Salt or to taste 1/2 teaspoon turmeric powder 1 teaspoon coriander powder 1 teaspoon red chili powder 1 tsp ajwain (carom seeds) 1/2 teaspoon dry mango powder Cilantro to garnish 1” piece grated ginger 1 lunch asafetida (hing) Method: 1. Wash arbi under running water. 2. Put them in a pressure cooker and add a glass of water. Cover the lid and let it cook till you get one whistle. 3. Once boiled and pressure is released, peel the arbi and cut them in slanting slices. 4. Now in a big bowl take besan, carom seeds, salt and red chili powder. Mix them well. 5. Add arbi pieces so that they can nicely get coated in besan mix. 6. Heat oil in a large pan and shallow fry the besan coated arbi pieces. 7. A perfect condiment to make your salads, breadsticks, kababs or any other food even more delicious! Ingredients: 3 heads of garlic, pealed 4-5 cups of vegetable oil (canola/sunflower - don't use olive or sesame oil) 1 lemon, freshly juiced 1 teaspoon of salt (or to taste) Method: Note - Before you start, ensure that all ingredients are at room temperature for a more reliable outcome. 1. First of all, add the garlic and salt in the food processor and run for about 10-20 seconds. 2. Stop the processor, scrap garlic down the sides, then run processor again for another 10-20 seconds. 3. Repeat the process 3 - 4 times until the garlic starts to turn pasty and looks crushed. This is very important to reach before proceeding. 4. At this point, turn the processor back on and keep it on until the end. 5. Start adding the oil to the processor at a very slow speed, in a very thin stream,  ½ cup at a time. 6. Sprouts & Channa (chickpeas) Cutlets

A healthy and delicious snack that everyone will love! Ingredients: Green moong sprouts - 1.5 cup Boiled chick peas - 1.5 cup Salt to taste Red chilli powder - as per your liking Chopped onion - 1 Green corriander leaves - 1/2 cup Green chilli - 1 (optional) Besan (Gram flour) - 2 tbsp Method: 1. Mashe the chickpeas and sprouts nicely in blender. 2. Then add salt and red chilli powder, chopped onion, green coriander leaves, green chilli (optional) and besan. No potato is used in this recipe. 3. Make the cutlets by giving a round cutlet shape to the dough. 4. Shallow fried the cutlets on a non stick pan and serve with salad and any condiments of your choice! PS - You can even deep fry the cutlets if you want instead of shallow frying them. Enjoy hot!

Homemade Bounty Bars

This one is an easy recipe as it has just three ingredients. The recipe says desiccated coconut but I used fresh grated coconut. I dry roasted it first and then lightly ground it before mixing in condensed milk. Here goes the recipe... Ingredients: 🌴 200g desiccated coconut 🌴 1 can condensed milk (397g) 🌴 200g milk or plain chocolate Method: 🌴 Pour the condensed milk over the coconut and stir until evenly mixed. 🌴 Grab handfuls of the coconut mixture and shape into bars - you can make them as big or as small as you like. Arrange on a lined baking tray or piece of greaseproof paper and allow to set in the fridge. The coconut will not go too firm but it will hold it's shape. 🌴 Melt the chocolate, either on the hob or in the microwave, and allow to cool. Spoon the chocolate over the coconut bars and leave on a wire rack to harden. Place a plate under the wire rack to catch excess chocolate. Recipe by my friend - Sarika Mehta Time Taken: 55 - 60 minutes (including baking time) Ingredients: Whole wheat flour - 3/4 cup Granulated sugar - 1cup Salt - 1/2tspn Baking powder - 2 tspn Unsweetened cocoa powder - 1/3 cup Unsalted butter - 1/2 cup melted and cooled Yogurt - 1/2 cup +2 tbspn more Vanilla essence - 2 tspn Walnuts - half cup Method: 1. Preheat the oven at 180 degrees. 2. Prepare the tin with parchment paper and oil. 3. In a bowl sieve together flour, salt, baking powder and cocoa powder. 4. Now, add sugar into it and mix well. 5. In another bowl, take the butter, curd and vanilla essence and mix till everything is incorporated nicely. 6. Next, add the dry ingredients and walnuts into this and mix with a light hand. Deliciously soft and cheesy bread! Here I have used cheese spread but you can customize it and made this bread with any cheese or any filling of your choice! Ingredients: Lukewarm Water or a Mix of Milk and Water - 150 ml (2/3 cup) Butter or Olive Oil – 20 grams (1 1/2 tablespoons) All Purpose Flour -125 grams (1 cup) Whole wheat flour – 125 grams (1 cup) Sugar or Honey – 1 table spoon Salt – 1/2 teaspoon Instant Yeast – 1 teaspoon Egg- 1 (for egg wash, optional) (You can use any basic bread rolls recipe for the base) Filling: Cheese spread Oregano (You can also put any other herbs of your choice) Method: 1. A unique way to serve Gajar ka Halwa 😃 Recipe of gajar halwa - Ingredients: * 10 medium tender juicy carrots * 4 cups full milk * 4 tablespoon ghee (clarified butter) * 10 to 12 tablespoon sugar or as required * 20-25 whole cashews (kaju) * 5 to 6 green cardamom (chotti elaichi) - powdered finely in a mortar-pestle or about 1/3 teaspoon cardamom Method: 1. Rinse, peel and grate the carrots. 2. In a kadai or deep thick bottomed pan combine milk and grated carrots. 3. On a low to medium flame, bring the whole mixture to a boil and then simmer. 4. While the mixture is simmering on a low flame, keep on stirring in between. 5. The grated carrots will cook in the milk and the milk will start to reduce and evaporate. 6. When the milk has 75% reduced, add the ghee, sugar and powdered cardamom to the mixture. 7. Stir well and continue to simmer and cook on a low flame. 8. Ingredients: 1 cup Boiled n shredded chicken One onion chopped A fistful of methi/ fenugreek leaves Finely chopped or grated carrots Grated broccoli (blanched) White bread slices (2 per sandwich) One egg 1/2 cup bread crumbs Salt n pepper as per taste Oil for sauté 1/2 cup oil for frying too 1 tbsp butter For dip - I mixed ketchup and mayonnaise Method: 1. Jackfruit is mostly eaten as a fruit but we Punjabis make it as a dry vegetable - a side dish with some light daal and rotis. It tastes amazing with the traditional Indian spices and flavors of roasted onions, ginger and garlic! Here goes the recipe my way... This dates and dry fruits barfi is not only delicious to eat but healthy too! It has the richness and proteins from the dry fruits and dates and very less sugar making it a very good option for everyone - kids as well as adults! You can make a vegetarian version of it too by replacing the chicken with paneer! This is a simple and easy to make recipe which was loved by everyone in my family!  Here goes the recipe.. Preparation Time: 20 minutes Baking Time: 35 minutes Total Time Taken: 55 minutes Ingredients: 1 cup of Semolina/Rava/Sooji ( I used the fine variety) 1 cup Mango pulp (ready made/canned/fresh mango pulp-I used freshly squeezed) ¼ cup oil- Any flavorless oil ¾ cup Sugar 1 teaspoon Baking powder ½ tsp ground cardamom (optional) ¼ cup chopped nuts for garnish, I used pistachios because they add a nice color and texture (optional) 3 tsp Tutti Frutti (to give a nice color to the cake) Method: Pre-heat the oven to 170 degrees C. Mix the semolina with sugar, cardamom and baking powder. Next, add oil and mix well. Finally add the mango pulp and mix again. Let it sit for 15 minutes.
