Mug Dhokla

Trial of the Day.. Mug Dhokla! 😀😀 Mug Dhokla Ingredients: 1 cup Besan 1 cup yogurt 1 green chili 1 tsp grated ginger Salt to taste 1 tbsp sugar tsp turmeric powder 1 tbsp oil 1 cup water 1.5 tsp Eno or fruit salt For tempering: 2 tbsp oil 1 tsp mustard seeds 1 green chilli, chopped Curry leaves 1 tsp sugar A little water Method: 1. In a bowl, mix all the ingredients for the dhokla except Eno. 2. Add eno salt in the last when you have got a lump free smooth batter 3. Pour in a thick microwave safe greased cup so that the dhokla batter fills up almost of the cup. 4. Microwave on high for 2.5 to 3 minutes (first do for 2.5 minutes as mine was done). 5. In a pan, heat oil and add mustard seeds. After they crackle, add slit chilli, curry leaves, sugar and water. 6. Pour this tempering over the dhokla and enjoy hot! Mug Dhokla

Vegetables Sesame Nuggets

Vegetables Sesame Nuggets Ingredients: 2 large boiled and mashed potatoes 2-3 tablespoons oil for pan frying 1 medium carrot, peeled, grated 1/2 cup peas, boiled and slightly mashed 1/4 cup blanched and grated broccoli 1/2 cup crumbled paneer 1/4 cup oats powder 1 cup breadcrumbs 1/2 cup green Coriander leaves 1 tbsp ginger and green chili paste Salt to taste 1 tsp Red chili powder 1/2 cup sesame seeds For coating: * Make a lump free slurry of 2 tbsp flour  and 2 tbsp corn flour * 1/2 cup breadcrumbs For serving: * Sweet chilli sauce and green chutney to serve For garnishing: * Green Coriander leaves for garnish with some salad Method: 1. Take all the ingredients except chutneys and salad in a bowl an mix nicely so that they get well blended 2. Now make a log type dough on a flat surface and cut the desired size pieces. 3. Eggless Date & Walnut Cake

Eggless cake with a twist of jaggery! Eggless Date & Walnut Cake Ingredients: Dates – 20-25  Milk – 1 1/2 cup All purpose flour – 1 1/2 cup Baking soda – 1 1/2 tsp Jaggery – 1 cup Melted butter – 4 tbsp (use oil for vegan version) Walnuts- 1/4 cup ( chopped) Salt – 1/4 tsp Method: 1. Grind dates and milk together to form smooth thick paste. 2. Transfer this to bowl. Add all purpose flour, salt, sugar, baking soda, melted butter and mix well. 3. Now add the chopped walnuts and mix well.  Batter is ready. 4. Preheat the oven for 350 degree Grease the baking pan with butter. 5. Pour the batter into the baking pan and bake for about 30 minutes or till knife inserted comes out clean. 6. Let it cool down completely even before you slice it. Eggless Dates cake is now ready.
