Nawabi Tarkari Pilaf
A flavorful blend of aromatic spices, assorted vegetables and mild spices which makes this dish so delicious and amazing!
Eid Mubarak to everyone!
Ingredients:
For the pilaf -
1 cup, Basmati Rice
2 cups Water
1 cup, Milk
1 tablespoon, Ghee
1/4 tsp, Cumin seeds
2-3 Cloves
1 small piece Cinnamon stick
1 Bay Leaf
2 tsp Ghee
Salt to taste
1 tsp Oil
1/2 tsp Garam Masala
1/2 tsp Red Chili powder
Fried almonds, cashew nuts, raisins with 2 tsp ghee
Paneer, cut into small cubes deep fried and immersed in water with a pinch of turmeric
Few strands saffron dissolved in 4-5 tsps of warm water
Vegetables -
1 cup French beans, Carrot, Green Peas and baby corn
5-6 baby potatoes
Fried crisp onion
Method:
Cooking of Rice -
1. Wash and soak the rice for 15 – 20 mins.
2. Saute ghee and add the whole spices.
3. Then add the drain rice and combine everything well.
4. Add water and milk and cook till almost done.
For the vegetables -
1. Take oil in a pan and sauté the boiled vegetables.
2. Now add all the powdered spices, mix well and cook for sometime.
Assembling of pilaf -
1. In a handi or a thick pan, grease the bottom with ghee, place one layer of rice, followed by vegetables and paneer and nuts.
2. Cover with next layer of rice. top with fried onions.
3. Sprinkle saffron milk.
4. Spread the layer of coriander leaves & mint leaves and cover tightly with a lid.
5. Cook on dum for 10 minutes
Your Nawabi Tarkari Pilaf is now ready!
Serve hot with any raita of your choice. Here I have served with beetroot raita. Used boiled grated beet in thick beaten curd. Added rock salt and roasted cumin powder.
