Mango Mastani

Ingredients: 2 cups chopped mango cubes 1½ cups Milk 1½ tablespoons Sugar or as per your liking 2-3 Ice Cubes 1/2 tsp tutti fruti 1 tbsp cashews n almonds 1 scoop vanilla ice cream Method: 1. Wash, peel and chop mangoes into small pieces and put them in the freezer for about 10 minutes. 2. After 10 minutes, take them out and transfer them to a blender jar. 3. Add sugar and ice-cubes to the cubes and give it a nice churn till it reaches a thick paste-like consistency. 4. Now add milk to it and blend until it is smooth and creamy. Make sure there are no mango chunks in it. 5. Pour prepared shake into serving glasses, garnish with cashews, almonds, some tutti fruti and a scoop of ice cream and serve! Notes: 1. I churn mango alone before adding the milk so that the mango threads get crushed nicely as my kids don’t like it while drinking. 2. The color of the drink depends upon the color of the mangoes.

Naan Khatai

Tried my hand at making the very popular and delicious desi biscuits, naan khatai. Naan khatai is an authentic Indian cookie widely popular in Northern India. Ingredients: 1 cup chickpeas flour 1/2 cup all purpose flour 2 tbsp semolina 1 tsp baking powder 1/2 tsp cardamom powder 1/2 cup powdered sugar 1/2 cup ghee 1-2 tbsp milk (if needed) Slivered pistachio as needed Method: 1. Cream ghee and sugar with help of a whisker or a beater till it’s light. 2. Take a bowl and mix all the dry ingredients in it. 3. Now add the dry ingredients in the wet mix of ghee and sugar and knead lightly till a dough is formed. 4. If you feel the mixture is a little dry, add milk. Mine wasn’t dry since I used melted ghee. 5. Pinch lemon-size dough and make balls. 6. Place pistachio n sprinkle some cardamom powder on each. This step is optional. 7.
