Fried Chicken Sandwiches
This dish is one of the most loved ones by my kids.. Enjoy the recipe!
Ingredients:
1 cup Boiled n shredded chicken
One onion chopped
A fistful of methi/ fenugreek leaves
Finely chopped or grated carrots
Grated broccoli (blanched)
White bread slices (2 per sandwich)
One egg
1/2 cup bread crumbs
Salt n pepper as per taste
Oil for sauté
1/2 cup oil for frying too
1 tbsp butter
For dip - I mixed ketchup and mayonnaise
Method:
1. First, heat up the oil in a pan and sauté the onions.
2. Next, add the vegetables and sauté again for a few minutes.
3. Now add the shredded chicken pieces, salt and pepper into the mix and stir well so that everything blends well.
4. Take out the mixture in a bowl to cool down.
5. By then, prepare the white bread slices (cut into round shape with a sharp cutter).
6. Apply little butter on the bread slices.
For assembling:
1. Take a round bread slice.
2. Keep filling in the middle.
3. Keep another slice on the top.
4. Use slurry to seal the edges.
5. Dip the stuffed sandwich in beaten egg (Take a deep bowl) and roll them in a flat plate containing bread crumbs.
6. Now Shallow fry the sandwiches in a pan (you can deep fry or bake them too).
7. Cut them in half and serve with the dip of your choice. I served with ketchup & mayonnaise mix dip.
