Jackfruit Fry

Jackfruit is mostly eaten as a fruit but we Punjabis make it as a dry vegetable - a side dish with some light daal and rotis. It tastes amazing with the traditional Indian spices and flavors of roasted onions, ginger and garlic!

Here goes the recipe my way...


Time Taken:

Frying - 15 minutes
Preparation - 10 minutes
Cooking - 20-25 minutes

Ingredients:

* Mustard oil for frying & 2-3 tbsp for cooking
* 500 grams kathal (jackfruit), chopped
* 2 finely chopped onions
* 4-5 pods of garlic grated or chopped
* 2-3 spoons ginger grated or chopped
* tomato puree of 3 tomatoes
* 1/2 tsp red chilli powder or as per taste
* 1 tsp dhania powder
* 1/2 tsp haldi powder
* 1/2 tsp garam masala
* Salt as per taste

Method:

1. Heat oil in a wok & fry the kathal till they just change color. do not cook or over fry them.
2. Remove the oil and add 2-3 tbsp fresh oil & heat oil on high heat.
3. Once oil is hot add onions & saute for 5-7 minutes till light brown.
4. Add ginger & garlic & saute till medium brown.
5. Add 2tsps of curd (its optional but I usually put in my curries).
6. Add tomato puree & stir well. Add all spices & salt & stir again.
7. Add the kathal. Reduce heat to low, mix well & cover with a lid. Let it cook.
8. Check every 3-4 minutes. Stir & cover again.
9. Repeat this till kathal is soft & done.

If cooking in a pressure cooker then just add 1/2 cup water n cook for two whistles. Open lid and let it cook nicely till water evaporates.


Garnish with green coriander and serve hot!

Note:

Alternatively one can avoid frying and do that step in an air fryer.

1. Preheat the air fryer for 10 minutes.
2. Then put the pieces of jack fruit in it and pour little mustard oil over the pieces for approx. 10-15 minutes.
