Carrot & Dates Cake

This unique combination of carrots and dates in a cake turned out to be very yummy and was loved by everyone in my house! The recipe is as follows..


Total time taken: 50-60 minutes

Ingredients:

2 cups grated carrots
1 cup All Purpose Flour (Maida)
1 cup wheat flour
1 cups powdered sugar
1 cup chopped walnuts
1 cup chopped dates
1 cup oil
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla essence
1.5 tsp cinnamon powder
2 eggs


Method:

1. Mix maida, powdered sugar, baking powder, soda and cinnamon powder.
2. Once nicely mixed, add oil, grated carrots and eggs and beat for around 2 minutes with an electric mixer or a ladel. Do not over mix!
3. Next, add chopped dates, crushed walnuts and vanilla essence into the mix.
4. Now, oil a tin pan and sprinkle some flour over it. Make sure to dust off the excess.
5. Bake at 170 degree Celsius for 40 minutes or till the skewer comes out clean
6. Place the cake on a cooling rack till it cools down.
