Kesariya Coconut Barfi

Coconut is considered as an auspicious fruit in India for many occasions. My mom used to make coconut barfi and laddoos in different flavors. Here I present them to you in kesariya or saffron flavor.

Kesariya (Saffron) Coconut Barfi
Time Taken: 20 minutes

Ingredients:

1 grated coconut
1 can condensed milk
8-10 powdered cashews
2 tsp cardamom powder
Slivered pistachio (as per liking)
8 -10 saffron strands
1 tbsp hot milk (to mix with saffron)
1 tbsp pure ghee/oil (to grease the plate later)

Method:

1. In a nonstick pan heat ghee and add grated coconut and stir fry it. Stir continously for a few seconds. Be careful, the color of the coconut should not change.
2. Now add condensed milk and stir it again.
3. Mix saffron in one spoon of hot milk and mix in the mixture. This will give a nice color and flavor to the barfi.
4. Add cardamom powder and cashew powder.
5. When the mixture leaves the side of the pan, transfer it to a greased flat plate.
6. Spread it all over the plate evenly and level it.
7. Spread slivered pistachio on it.
8. Cut into shape of a barfi as per the size you prefer and let it set for sometime.
9. Once solidified, take it out from the plate and serve!
